The winter solstice is just 10 days away and the shortest day of the year is almost upon us…
Tough times Great Gorillas. We’re exhibitionists – we like to be seen. So it’s hard strutting along on our Great Gorilla Run training runs in the shadowy December mists.
But take heart GGs – in two weeks time, it’s not only Christmas, but we’ll have also turned towards spring.
The days will start getting longer and it won’t be long before you’re basking in brightness on your morning and evening runs once again.
In the meantime, console yourself with a post-run treat… BANANA AND YOGHURT PANCAKES
INGREDIENTS (makes about 12)
2 over ripe bananas, chopped into a bowl
2 teaspoons lemon juice
125g plain flour
2 teaspoons baking powder
Pinch of salt
1/2 teaspoon ground cinnamon
1 tablespoon soft brown sugar
2 eggs , separated
125ml yoghurt
1 teaspoon vanilla essence
Zest of half a lemon
Melted butter
INSTRUCTIONS
1) Mash the bananas with a little lemon juice.
2) Sift the flour, baking powder, salt and cinnamon into a large bowl and add the
sugar.
3) Mix together the mashed banana, egg yolks, soured milk or cream, vanilla and lemon zest.
4) add to the dry ingredients and stir until just combined.
5) Whisk the whites in a separate bowl until soft peaks form
6) Fold into the batter lightly
7) Heat a large frying pan over a medium heat and brush with a little melted butter.
8) Use a ladle of mixture for each pancake. Cook for 2 minutes on one side and then flip the pancake and cook for a further 1 minute.
Smoother with honey or maple syrup, blueberries or other fruit and maybe a little more yoghurt and scoff you greedy Great Gorilla!
If you don’t manage to eat all of them in one go, they freeze very well.
